
Berry bliss dessert
Designed and approved by dietitians, this is a light and elegant dessert packed with fresh berries. Serve with creamy vanilla yogurt, and a touch of mint. It’s good for your heart and great for your taste buds!
Ingredients
1/2 x 9g packet of raspberry flavoured diet jelly crystals
1 cups of water
100g vanilla flavoured yoghurt
100g fresh strawberries (or redcurrants), hulled and cut into halves
75g fresh or frozen raspberries
75g fresh or frozen blackberries
75g fresh blueberries
A few mint leaves, chopped finely
4 tablespoons walnuts, roughly chopped
Method
1 Mix together the raspberries, blackberries and chopped mint. Place into two serving dishes.
2 Make up the jelly as directed on the packet. When cooled, pour equal amounts into the two serving dishes over the berries and mint. Allow to set in the fridge for 2-4 hours.
3 Top each dish with 50g of the vanilla flavoured yoghurt.
4 Garnish with blueberries, cut up strawberries (or redcurrants), chopped walnuts and a whole mint leaf.
