
Cold noodles with Chobani-sesame sauce
An easy, refreshing summer recipe. Cold noodles are perfect to make ahead of time for an easy meal.
Ingredients
2 tablespoons Chobani Non-Fat Plain Greek Yogurt
2 tablespoons reduced-sodium soy sauce
2 tablespoons smooth peanut butter
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon chili sauce
230g wholemeal spaghetti
2 spring onions, trimmed, thinly sliced
½ small red capsicum, seeded, thinly sliced
Toasted sesame seeds for serving
Method
- Blend soy sauce, peanut butter, Chobani yogurt, sesame oil, vinegar, ginger and chili sauce in blender until smooth.
- Cook noodles according to package directions. Pour sauce over noodles and toss.
- Add 1-2 tablespoons cold water to thin, if necessary.
- To serve, sprinkle with spring onions, red capsicum and sesame seeds.
